Savory Roasted Cauliflower
INGREDIENTS:
- 1 head cauliflower, cut into florets
- Salt and pepper, to taste
- ½ cube butter
- ½ cup pine nuts
- 1 or 2 garlic cloves. smashed and chopped
- ½ cup dates, chopped
DIRECTIONS:
Preheat oven to 425. Evenly spread the cauliflower on baking sheet; season with salt and pepper. Roast in the oven, tossing occasionally, until golden brown at the edges (about 20 minutes).
Melt butter in small skillet over low heat. Add the pine nuts and cook, stirring frequently, until they’re light golden brown. Add garlic and dates, and continue cooking until garlic and dates are softened.
Put the hot cauliflower in a serving bowl; drizzle the pine nut mixture over the top, and toss to combine. Taste. Adjust seasoning if necessary. Serve warm or at room temperature.
